pumpkin banana muffins

 

It seems like fall is almost here. And though I have always been a summer girl, the New Englander in me also has a huge heart for autumn! Plus, it was just too hot this summer! I mean, record breaking hot in Tennessee which means miserable!

I am sad to see it get dark earlier, but I love the smell of “football weather”. Tobacco is smoking in the barns and the leaves have that first hue of change.

I seriously feel like it should still be may though. I’m not sure where this year has went, and it makes me a little sad as a mama to a growing baby girl. Anybody else feel that way?

Anyway, today the fall bug bit and I opened my first can of pumpkin!

this is basically exactly the same as my banana nut muffins. Except I added 1 cup pumpkin. I didn’t have any nuts or chocolate chips (which is very rare), but they were still delicious! Elizabeth actually ate TWO after dinner! She calls all muffins “cake”! I wondered how the consistency would be with the added wet ingredient, but they were perfect! Moist, which I like! They would also be amazing with a cream cheese frosting! But I didn’t have the ingredients for that either!

delicious mix of banana and pumpkin together in a moist muffin
Ingredients
  • 1 stick butter (room temperature)
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 Tbs pumpkin pie spice
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup pure pumpkin
  • 3 ripe bananas, mashed
  • 1/2 cup chopped nuts (pecans or walnuts) – optional
  • 1/2 cup chocolate chips – optional
Instructions
  1. Preheat oven to 350 and line muffin tins with liners
  2. In large bowl, combine butter & sugar; mix well. Add the salt, spice, eggs, vanilla, flour, baking soda, baking powder, pumpkin & bananas. Mix well. Fold in nuts & chips.
  3. Once cooled, can be frozen for 2 weeks –thaw/reheat

  1. Jaima…I love FALL!! This past week I have really felt the air change. I am with you with “where has the year gone?” Seems like I was just pregnant yesterday and now my baby is pushing 5 months old!! Time needs to slow down so I can enjoy these moments.

    These look so yummy! I have a big can of pumpkin that is just calling my name…might have to make these this weekend. :)

  2. I thought.. OH.. I can make this.. I have a can of pumpkin.. but realized it was for making Pumpkin Pie… not the pure pumpkin,, Oh.. well, this weekend I plan on going to Fred Meyers so will get a few cans of Pure Pumpkin… And some bananas…. This recipe sounds so yummy….

  4. These turned out SO good! My husband won’t try the mbc there’s pumpkin in them. He is missing out! More for me and my daughter. They are just so moist and turned out perfect. Thanks for sharing this recipe! I was going to make a different recipe for muffins for my daughter’s 1st birthday, but I think these would be even better than the other ones. They are just SO delicious!

  5. Yummy! Just made this and they are great. Super moist! My kids loved them. I have a in-home daycare so I will be making a second batch for my dkc snack! Only thing I changed was I added 1tsp of cinnamon just because we are all cinnamon freaks here. Printed the recipe off and it’s going in my binder :)

    I am going to tweak it a bit because I have a slight allergy to dairy.

    This will be my recipe:
    1/2 c of solid coconut oil
    1/2 tea of salt
    1TBSP Pumpkin pie spice
    1 tea of vanilla extract
    1 tea of baking soda
    3 ripe banana’s
    3/4 c brown sugar
    2 eggs
    3/4 c whole wheat flour
    3/4 c all purpose flour
    1 tea baking powder
    1 c pure pumpkin
    1/2 c nuts-walnuts
    1/2 c choc chips

    I will let you know how they turned out. Thanks for the idea!

  7. I see you listed all purpose flour…did you use that or GF? What is your favorite GF flour to use?
