Southwestern Quinoa Salad

I love quinoa. It is the perfect gluten free grain and alternative to super starchy pastas and rice. It is full of protein, fiber, phytonutrients, and is a good antioxidant!

Did I mention it is super yummy, too?! I often serve it as a side in place of potatoes or rice, but I also like to make salads out of it like I would for a pasta salad!

The last salad I made was a “southwestern” style salad with black beans, fresh corn, tomatoes, red onion, cilantro and avocado! I added a little of my homemade cajuny/chili seasoning and everyone cleaned their plates!

easy nutritious salad. Serve as an entree with chopped grilled chicken or as a side without.
Ingredients
  • 3 cups cooked organic quinoa
  • 1.5 cups black beans
  • 1.5 cups corn
  • 1 cup diced tomato
  • 1 avocado diced
  • 1/4 cup red onion chopped
  • 1 cup chopped grilled chicken (optional)
  • fresh cilantro (optional)
  • salt/pepper/cumin/chili powder/
Instructions mix all together
