Gluten Free Recipes {A Guest Post}

 
Happy Friday, y’all! I am guest posting about my favorite tips for creating a balanced home over at House of Grace today! So I have a great guest post for you here! I had the pleasure of meeting this gal at BlissDom this year, and she was the sweetest thing! We were both total newbies (though she refused to believe that I was very much new at this whole blog thing)! I had read her blog before, after realizing she runs a Gluten Free household!

Hi, I’m Angela from Jumping With My Fingers Crossed.  I am a mother of four sort of crazy kids age 10 and under.  My blog isn’t about how to make a craft or any kind of DIY project, it is mostly a how to (or how not to) survive and sometimes thrive in life.  Sometimes my life feels like a crass sitcom on FOX.  Other times it’s more like an absurd reality show on TLC.   Life can be pretty messy and complicated.  But it can also be amazing. Most days all we can do is jump with our fingers crossed and hope for the amazing.


While I have no real insights on home decor, I can indeed offer some advice on eating gluten free.  My 5-year-old son was diagnosed with Celiac disease almost two years ago and that is when we embarked on our gluten free journey.  Even though my son is the only member of the family with gluten issues, we decided in a bold one-for-all-and-all-for-one type of decision that we would be a gluten free household.
And even though we felt heroic sacrificing for our boy, we also felt a little more than disappointed with our dining options (or supposed lack there of).  But we quickly learned that eating gluten free doesn’t have to be a horrible punishment. 
Here are two of my family’s favorite gluten free recipes.  I promise you, the scones are a crowd favorite even with folks with no dietary restrictions.  The guacamole is a great appetizer, side dish or I have used it in salads.

8 ripe avocados

4 tomatoes diced

1/2 red onion diced

1/4 cup Cilantro chopped

1 Tbs of Kosher salt

1 tsp Garlic salt

3 tsp Ground Cayenne Red Pepper*

1. Peal and pit avocados.  Then mash with a fork.
2. Add rest of ingredients.
3. Serve with gf chips, use as a topping in gf tacos or gf nachos.
4. Enjoy!
*Add more if you like it spicier of course.

Chocolate Chip Scones
2 cups gluten-free all-purpose flour blend, plus additional for work surfaces
1/4 cup sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
3/4 teaspoon xanthan gum
1/2 teaspoon baking soda
1 cup semisweet chocolate chips, divided
1/2 cup (1 stick) cold butter, cut into small pieces
3/4 cup milk
1/2 cup plain yogurt

1. Preheat oven to 425 degrees F.
2. Combine flour blend, sugar, baking powder, salt, xanthan gum and baking soda in large bowl.  Add 1/2 cup chocolate chips and toss to combine.
3. Cut butter into flour mixture with pastry blender or two knives until coarse crumbs form.  Stir milk into yogurt in medium bowl until combined.
4. Gradually add yogurt mixture to flour mixture.  Stir together just until dough begins to form.  (You may no need all of yogurt mixture.) Transfer to surface sprinkled with flour blend.  Knead 5 or 6 times until dough holds together.  Divide into 3 pieces.
5. Pat each dough piece into circle about 1/2 inch thick.  Cut each circle into 6 wedges with floured knife.  Transfer scones to baking sheet; space 2 inches apart.
6. Bake 10 to 14 minutes or until lightly browned.  Cool on wire rack.  Meanwhile, melt remaining 1/2 cup chocolate chips in small bowl.  Drizzle over scones.
Makes 18 scones.

Even though it’s been almost two years, I am just now trying to cook from scratch more.  As a busy mom with busy kids, I do rely on mixes.  Here are a couple of our gluten free favorites: Gluten Free Bisquick–we use it for pizza, pancakes, waffles and more.  We LOVE it. And also, Bob’s Red Mill Homemade Wonderful Bread Mix–we use it in our bread maker and it turns out quite tasty.
