Homemade Enchiladas {A Repost from ’09}

Since I’ve just returned, I thought I’d dig into my archives and find this recipe! I know it’s not traditionally Christmasy, but it may just be the right alternative you need right now! Or at least a recipe to pin for later!!!

A & his mother (“Mama C”) grew up in Lincoln, New Mexico cutting their teeth on authentic Mexican food. We both love Mexican food and I’m guessing you might too?

Thought I’d share Mama C’s super easy enchilada recipe with you.

Ingredients
1lb hamburger
1 can enchilada sauce (I make my own – store bought has MSG in it)
8 corn tortillas
salt, pepper & chili powder to taste
toppings of choice (I had lettuce, tomatoe, onion, cilantro, avacodo, sour cream, & taco sauce)

Traditional Enchiladas
1) Brown hamburger with s/p & chili powder. Then set aside
2) In a small skillet, put about 1/4 inch oil and heat as if to fry
3) Put enc sauce in a pie plate (or other shallow bowl to coat tort with)
4) When oil is hot, GENTLY fry tort (you don’t want to cook it in the oil, only soften it and make it pliable, a few seconds)
5) Then take tortilla, dredge through ench sauce and place on seperate plate
6) Put hamburger on top, and fry another tort
7) Repeat process until you get 8 (usually 3 tortillas is a meal – men seem to like 4).
8) When you get the torts / hamburger layered top with ench sauce (traditional enchiladas are topped w/ a fried egg, but don’t have to be)
9) Place in the oven to keep warm
10) toppings on side.

Rolled Enchiladas (This is how I made them)

1-5) Complete steps 1-5 from above
6) Then put hamburger in tort and roll them, place seam side down in a long baking dishput the seam
7) Pour remaining ench sauce on top
8) Bake for about 30 min at 350
9) Top with cheese and bake ’til cheese is melted
10) Serve w/ toppings

    Okay – how do you make your enchilada sauce? :) I am all for trying to get away from chemicals and preservatives in our food.

    Yes, I too would love the ench. sauce recipe, please. We have asthma in my family and MSG is something we are suppose to stay away from. Much thanx!
